This volume was made after its subject was dead. In June 1995 Darrell Anderson wrote round Seattle's kitchens asking former apprentices “going back many Years” each to send a résumé and “another page or at least a Paragraph telling how the Culinary Apprenticeship, and Chef Sir played a part in it.” Roughly forty people answered. What is bound here is their answers, together with programmes, certificates, trade-press cuttings and the committee's own papers.
All 257 frames are shown as captured and levelled, not restored: page curvature, photocopy contrast and binder rings are baked into the images. 24 leaves were sideways in the original scans and were righted by the bundle's own pipeline before they reached this archive; the orientation of every one of them was decided by running OCR at all four rotations and comparing the scores, with three called by eye where the lettering was calligraphic.
There is no photograph of Sir here. Two group portraits survive and nobody has identified the faces. The volume is a memorial without a picture of its subject.
On what is reproduced: the scans are the collection's own, but what is printed on them often is not. 66 of these frames carry third-party material whose permission has not been cleared or whose holder has never been traced, and 41 carry personal details — home addresses, telephone numbers and two dates of birth — belonging to people who are most likely living.
