CHEESECAKE

Jack Malone, Cafeteria Manager, Convair Plan, San Diego, California

50 portions.

Ingredients

  • 2 pounds 10 ounce COTTAGE CHEESE
  • 21 ounces SOUR CREAM
  • 1 ounce VANILLA
  • 1/2 tsp. EGG SHADE COLOR.

Method

  1. Blend on high speed mixter for 8 to 10 minutes. Then add 1 quart can FABLE TOPPING and whip until firm. Make a JELL-O of 1 1/2 pounds LEMMON JELL-O and 2 quarts WATER. Use 1 quart WATER to dissolve the JELL-O, then use other half (ice cold) WATER, let firm up, but don't let it get stiff. Blend it to the above ingredients and pour into pans, lined with the following CRUST: 1 pound 10 ounces GRAHAM CRACKER MEAL, 5 ounces POWDERED SUGAR and 5 ounces soft MARGARINE all well blended. Save enough CRUST MIX to sprinkle on top for decoration. FABLE TOPPING is made by the FABIN FOODS, INC., Fullerton, California and is available through the frozen food jobbers.
