Costa Lazaretti, Chef
1 lb. to 4 servings
Method
- Allow plenty of water in a large kettle to come to a boil. Add salt to taste. Into the boiling water, place the spaghetti, (1 lb. to 4 servings). Stir briskly for a few minutes to prevent the spaghetti from sticking together. Boil not more than 14 minutes over-all. Lift spaghetti from kettle and drain in collander. Pour cold water over the spaghetti to prevent the strands from sticking together. Drain thoroughly. Arrange spaghetti on hot plates. Pour sauce over each portion. Sift grated parmesan cheese liberally over sauce and serve piping hot. This is a real Italian spaghetti in every particular, streamline for the American housewife. If you start the spaghetti in the boiling water exactly 4 minutes after the sauce has started to boil, both spaghetti and sauce will be finished at exactly the same time. 18 minutes from the time you begin the preparation.
