Sashimi.
Method
- One of the most important items here in Hawaii for a festive occasion or luau.
- Ahi, or Yellow Fin Tuna-, Filets should be well iced for a day or two. It is very important that the meat is NOT covered with ice but rather placed on a bed of ice which can drain, in the walk-in. The fish must be of a firm and dry texture.
- Trim off the dry outside and skin of the filet and cut into strips about 1 1/2" by 1 1/2". Then slice crosswise in 1/8" slices and arrange in neat rows (en cnevalle) on bed of finely shredded cabbage. Serve with Soy Sauce and hot mustard paste (Colemans) on the side.
