SPINACH SALAD

Method

Mash 1/2 clove garlic, cover with 1 Tbls. salad oil - let stand 30 min. Trickle the garlic oil over fresh spinach and let stand.
Dressing: Saute 3 slices bacon till crisp, save fat. Beat together 1 egg, 1 Tbls. sugar, 1 Tbls. tarragon vinegar, 1 Tbls. red wine vinegar. Pour slowly into bacon fat, stirring constantly till mixture has thickened slightly. Season with salt and pepper. Will not need much salt. Pour over spinach and toss well. Serve immediately.
