HAM AND SMOKED OYSTER STUFFING

Chris Wahlborg

Makes enough stuffing for a large 16- to 18-pound turkey.

Ingredients

  • [cut off]qt. dried crumbled bread
  • [cut off]c. chopped onions
  • [cut off]c. chopped celery
  • [cut off]2 lb. mushrooms, sliced
  • [cut off]2 lb. margarine
  • [cut off]c. chopped smoked oysters (two 3 1/4 oz. cans)
  • 2 c. diced cooked or canned ham
  • 1 Tbsp. poultry herbs
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 2 Tbsp. parsley
  • 1/2 tsp. monosodium glutamate

Method

  1. The day before serving, prepare the bread. Cut off the end crusts from 3 unsliced loaves of stale, firm-type bread. Pull out bread and crumble fine. Spread out on trays to dry. You will need 2 quarts dried. Saute the onion, celery and mushrooms a few minutes in the margarine. Toss with the crumbs. Add oysters and ham. Toss again well; add poultry herbs, salt and pepper, parsley and monosodium gluta-mate, tossing well after each addition. Stuff turkey in usual manner.
  2. Makes enough stuffing for a large 16- to 18-pound turkey. Use less for smaller bird, or if you like, freeze any extra stuffing from full recipe. It's nice to have on hand for a roast chicken.
